What's it all about?

Well Folks its not officially "Summer" but here in NM we had snow last Thursday preceded by 106 degree weather down in the southern part of the state. So averaging things out I think we are ready for iced coffee. Down at Wooby's cafe in Cedar Crest N.M. we have introduced the cold brew style of ice coffee and it is turning into a popular item. Since You all can't make to Cedar Crest below are the instructions to make this smooth low acid style coffee. If you come up with a great recipe post one for us we'd be happy to try it out. The process is as follows:

  • you will get a green stopper that you place in the bottom of he larger of the 2 containers. The hole is smaller than the stopper so you will want to twist and shove the stopper into the hole in one fluid motion. After a few times you will not have as much difficulty.
  • you will also get a felt pad. Soak this first in cold water. then place into the bottom of the bottom container before you add the filter and coffee grounds.
  • Then place coffee grounds 3/4 to 1 lb of ground coffee into a coffee filter.
  • Then there is a second container that has markings on the inside for 3/4 lb and 1 lb. place this container on top of the container that has the stopper felt pad and coffee.
  • Pour water into this container up to the appropriate level of 3/4 lb or 1 lb. This container has a small hole in the bottom and will drain the water into the bottom container and will steep the coffee draining into bottom container will take about 50 minutes.
  • I steep for 12 hours minimum longer will not hurt.. remove top container (clean and pull out of the way).
  • Over or in the sink take the provided carafe and get ready to pull stopper out and place steeped coffee container on top of the carafe and set aside where it will not get knocked over. it takes about 40 minutes to drain the concentrate from the steeping container into the carafe.
  • place carafe in fridge good up to 1 to 1.5 weeks.
  • I add 2 ounces of concentrate, 6 ounces water and some half and half 1-2 ounces all poured over a cup of ice. for larger cups just remember 1 part concentrate to 3 parts water.
  • For those with a sweet tooth I make a simple syrup 1 part water to 1 part sugar bring to just under a boil add sugar. take off heat and incorporate the sugar. I Like to place syrup into a squeeze bottle and refrigerate.

Get Creative...adding cream, vs half and half, or add any flavor and you can come up. blend strawberries or mango and add concentrate etc. etc.

Big thing to remember!
rinse felt filter because this can be reused. place back into the original container it was shipped in and add cold water and place in refrigerator after each use. Also about every 3-4 times boil felt pad for a few minutes.

I also suggest you buy a extra box of paper filters cause you only get 3 with the filtron brewer. Also if you tend to lose things buy the extra 3 stopper replacements just in case you lose one.

Sounds complicated but after to make it the first time you'll realize its not very difficult.
