Well this can be a debate that will last for a while. There is a purist point of view which says NO to both options. But reality says sometimes you don't consume what you purchase. So how do you store an overstock of coffee.
As all Roasters communicate the coffee is best within the first two weeks. At which point the coffee will degrade over time. Since we bag our coffee in degassing bags within hours of roasting. The coffee is packaged as best as we can manage. As long as the bag has not been opened. If you really know you aren't getting around to to coffee for a month then I can't argue against the freezer. But once you are ready to consume the coffee, don't keep popping coffee in and out of the freezer. Just keep the coffee in room temp dark environment. Our bags are Foil Gusset bags with Tie tabs or clips so leaving coffee on counter or in cupboard is fine.
As for the refrigerator. Well that is an emphatic No No. The moisture/humidity is too high and this is never good for coffee.
If you don't like the aesthetic of the bags, then place bag in a air tight opaque tin or cannister.
